Hawaiian raw fish bowl full of flavours
Poke has arrived to Prague a few years ago and I completely fell in love with it - it simply has it all. It is fresh, savoury, fruity, spicy, crunchy and creamy at the same time...and tastes like pure exotic. My husband always wanted to go to Hawaii because of its nature and now, after meeting this jewel of Native Hawaiian cuisine, there is another reason to put this tropical island on the top of our endless dream destinations list. And this salmon poke bowl helps us by planning and dreaming :)

These ingredients are enough for 4 portions:

400 g fresh salmon

300 g sushi rice

“crab“ salad (surimi sticks, mayo, white yogurt, lemon juice, salt, pepper)

wakame salad
-
wasabi mayo (wasabi paste, mayo)

wasabi peanuts
-
avocado
-
mango
-
carrot
-
cucumber
-
radish
-
black and white sesame seeds
-
nori sheets (chopped)
-
fried onions
-
soy sauce
-
sesame oil
-
lime juice from ½ lime
-
rice vinegar

Cook the rice - wash it first to remove the starch and then cook - I use 1 rice : 1,5/2 water.

While the rice is being cooked remove the skin from salmon and cut the fish into approx. 1 cm cubes.

Marinate the salmon cubes in lime juice from ½ lime, soy sauce 2-3 tablespoons, sesame oil 1-2 tablespoons, rice vinegar 1-2 teaspoons. Use less soy sauce if you prefer more natural fish flavour - I will use less nex time.

Once the rice is cooked, mix it with rice vinegar - 3 tablespoons and let cool.

For the “crab” salad chop the surimi sticks into small pieces and mix it with mayonnaise, white yogurt, lemon juice from ½ lemon, salt, pepper - you want to have a spread like texture.

For the wasabi mayo, just mix wasabi paste with mayonnaise - depends on how much wasabi you prefer.

Prepare fruits and veggies - dice the avocado and mango, slice the radish and cucumber, julienne the carrot.

Get salmon, rice and all the toppings ready for assembling.

Put the rice on the bottom of the bowl and then top it up with everything you like - I put “crab” salad, avocado, mango, veggies, wakame into sections around the bowl, salmon in the middle and then sprinkle with wasabi mayo, fried onions, wasabi peanuts, nori seaweed and sesame seeds. Enjoy :)
