stuffed peppers from North Macedonia

 

Stuffed peppers from North Macedonia, a recipe from my colleague Denis (and his mum :) ). I have heard Denis recommending his country to our guests many times and it made me curious. I have not visited North Macedonia yet but I did my research, cooked this tasty dish and I want more...more of North Macedonia, that seems to be a hidden gem with its beautiful nature, the oldest European lake and delicious food.

​Piperki Polneti - Stuffed Peppers from North Macedonia

  • 10 peppers

  • 400 g pork+beef mix minced meat 

  • 200 g white round rice

  • 200 g tomato sauce (passata)

  • 1 onion

  • 1 potato

  • 2 teaspoon (smoked) paprika

  • 3 teaspoons mixed spice “Vegeta”

  • a handful of fresh chopped parsley

  • vegetable oil

  • water

  • salt

  • bread for serving

  1. Let’s start with the ingredients preparation - chop the onion, cut off the tops from the peppers and take out any seeds.

  2. Put some oil (not much as the minced meat is usually pretty fatty) in the medium size pot, add chopped onion and mixed minced meat.

  3. Once the meat is warmed up, add 2 teaspoons of “Vegeta”, stir and fry/ for around 10 minutes. 

  4. Add a teaspoon of paprika, chopped fresh parsley, rice and around 250 ml of water. Mix well.

  5. Cook until the rice starts to get soft - the rice does not need to be fully cooked - you can turn off the heat once the water evaporates.

  6. Check how salty your meat mixture is and add salt if needed - “Vegeta” contains a lot of salt, so be careful here.

  7. Fill the peppers with the mixture - use a teaspoon. Close each pepper with a piece of potato.

  8. Put the stuffed peppers into the baking pan and add water - peppers should be more than half covered. 

  9. Add some oil on the top of the peppers and preheat the oven for 250°C.

  10. Bake the peppers in the oven for around 30 minutes. In the meantime prepare the sauce.

  11. In a small pot put together tomato sauce, 1 teaspoon of vegeta, 1 teaspoon of paprika, warm it up.

  12. After 30 minutes of baking, add the tomato sauce on the top of the peppers and around them.

  13. Bake for around 10-15 more minutes until roasted well. It depends also on how big your peppers are.

  14. Serve sprinkled with some fresh parsley and bread as a side.
