Italian Spaghetti

Aglio, Olio e Peperoncino

 

Spaghetti with garlic, olive oil and chili...this is my favourite meal to cook when I have almost nothing left in my kitchen - spaghetti with garlic, olive oil and chili. In max. 15 minutes you have the real Italy in your mouth - how awesome is that? You can see it on the menus of Italian restaurants, sometimes also with anchovies added and that is what I am trying today. PS: Italians would say to eat this pasta without cheese, so give it a try ;) Buon appetito!

  • 400 g spaghetti

  • 60 ml olive oil

  • 6 garlic cloves

  • 1 big fresh chili

  • 5 anchovies

  • salt

  • optional - fresh parsley, parmesan

 

  1. Cook the spaghetti in salted boiling water according to the instructions on the packaging/till al dente.

  2. While your pasta is being cooked, fry finely chopped garlic and chili on the olive oil, use a large pan or a pot.

  3. Use medium heat to make sure the garlic is not turning brown, add finely chopped anchovies.

  4. Cook for 5 minutes, add some salt if needed - anchovies are pretty salty so be careful here.

  5. When the pasta is cooked, mix it with the garlic/chili/ oil mixture.

  6. Put some fresh parsley or Italian cheese on the top and enjoy :)
